Mega Rainbow Layer Cake

No messing about here, let's get baking....


Serves 10 - 12

 

Ingredients

Cake

- 3 Eggs - 180g Self-Raising Flour - 180g Caster Sugar

- 180g Stork

- 20ml Milk - 2 tsp Vanilla Extract

- Red, Pink, Blue and Orange Food Colouring


Buttercream

- 250g Unsalted Butter

- 500g Icing Sugar


- Love Heart Sweets for decoration

- Strawberry Jam



Method - Pre-heat the oven to 160C Fan and line a large rectangular baking tray with baking paper. You then need to make dividers from folded foil to create equal sections for the different colours of cake batter. I use a 20x30cm tray and make 3 equal sections, I use a loaf tin for the final colour.

- In a large mixing bowl add the stork and sugar and beat until light and fluffy. Slowly add the eggs, milk and vanilla extract and combine thoroughly into the mixture.

- Add the flour and fold into the mix until fully combined. Once all the ingredients have come together use the scales to measure equal amounts of the mix into 4 separate bowls.

- Add a different food colouring to each of the bowls and mix into the cake batter. Once your desired colours have been achieved pour the coloured batter into each of the sections of the baking tray. For example you will have blue in one section, red in another etc.

- Level the layers and bake in a pre-heated oven for 16-20 min or until a toothpick comes out clean.


- Once baked, leave to cool on a cooling rack and start to prepare your buttercream. To make the buttercream you will need room temperature butter. Place the butter in a bowl and mix using a stand mixer or electric whisk for around 5 minutes. The butter should start to look whiter instead of yellow. Then gradually add the icing sugar and vanilla extract until fully combined.


- When your cake layers have fully cooled, assemble them with orange as the bottom layer. Spread a layer of jam on top and pipe buttercream around the edge to seal the jam in. Top this with the red layer and repeat. Next place the pink and finally the blue layer.


- Once all the layers are on top of each other we can begin to decorate. Using a pallet knife spread an even layer of the buttercream on the cake, making sure all the cake is covered. You can then decorate how you want, I used sprinkles and love heart sweets to create my desired look.
