No messing about here, let's get baking...
Makes 12
Ingredients
- 75g Unsalted Butter
- 250g Self-Raising Flour
- 1tsp Baking Powder
- ½tsp Bicarbonate of Soda
- 75g Caster Sugar
- 200ml Milk
- 1 Egg
- 250g Blackberries
Method
- Pre-heat your oven to180°C Fan and line a muffin tray with cases and set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Add the egg and milk and whisk to combine.
- Slowly add the flour, baking powder and bicarbonate soda, stirring until you get a mixture that is somewhat lumpy.
- Now add the blackberries and stir into the mixture, making a ripple effect.
- Spoon equal amounts into each muffin cases and bake in the oven for about 20 - 30 minutes, or until golden on top.
- Remove from the oven and place on a wire rack and allow to cool.
- Serve and enjoy :)
