No messing about here, let's get baking...
Makes 12 Muffins
Ingredients
- 275g Self-Raising Flour
- 2 tsp Baking Powder
- 1/2 tsp Bicarbonate of Soda
- 100g Caster Sugar
- 2 Eggs
- 100ml Light Olive Oil (Vegetable Oil)
- 250ml Greek Yogurt
- 1 tbsp Milk
- 8 Small Plums (chopped into small pieces)
Method
- Pre-heat the oven to 180C Fan and line a muffin tin with cases.
- Add the flour, baking powder, and baking soda into a large bowl. Mix in the sugar and leave to one side.
- In a measuring jug, whisk together the eggs, olive oil, yogurt and milk until smooth.
- Pour the liquid ingredients into the mixing bowl and fold into the flour until fully incorporated.
- Chop the plums into small pieces and remove the stones. Then add to the mix and fold until fully combined.
- Spoon the mix equally amongst the muffin cases and sprinkle with some Demerara sugar to create a crunchy top.
- Place into the oven and bake for 10 minutes at 180C Fan. Increase the temperature on the oven to 190C Fan for the last 6 minutes. Remove from the oven once golden on top.
- Remove from the muffin tray and leave to cool on a cooling rack.
