A classic muffin, only healthier!
This has to be one of my all time favourites. I can't even begin to describe how much I love these muffins, over Summer I must have baked them at least once a week. It is hard to say no to these bad boys, especially when they're filled with juicy exploding blueberries. These muffins are great for all seasons, the blueberries are great to get you in the summer mood but the smell of orange zest and cinnamon will make you dream of Christmas and warm fireplaces.
These muffins are about 158 calories per serving, packed with natural sugars, vitamin C, fibre and protein.
Ingredients
- 125g Wholemeal Flour (or whole-wheat flour)
- 125g Oats
- 3 tsp Baking Powder
- 2 tsp Powdered Cinnamon
- 125g Light Brown Sugar
- Zest of 1/2 a Lemon
- Zest of 1/2 an Orange
- 1 Large Egg White
- 100ml Bio-Active Greek Yogurt (Yeo-Valley / SKYR)
- 50ml Soya Milk
- 50ml Semi-Skimmed Milk
- 50g Margarine (melted coconut oil can also be used as a healthy substitute; making the muffins very moist)
- 200g Fresh Blueberries
Method
- Pre-heat your oven to 180C Fan and place your bun cases into a bun tray.
- Weigh out the flour, oats and sugar into a mixing bowl and stir in the baking powder, cinnamon and fruit zest until fully combined.
- In a jug measure out the yogurt and both varieties of milk, then beat together with the egg white. Melt the butter in a microwave, once fully melted beat into the yogurt mix.
- Once combined pour the yogurt mix into the dry ingredients and fold all the ingredients together. (If you are using melted coconut oil these steps will have to be done fast as the coconut oil sets quickly).
- Gently stir the blueberries into the muffin mixture. Spoon into your bun cases and sprinkle with a tiny dash of cinnamon before baking.
- Bake in the oven for 30 minutes, or until golden and spongy to touch. Once the muffins are cooked carefully remove from the tin and place on a cooling rack.
- Once cooled you are free to indulge.
