White Chocolate and Berry Oat Bars

No messing about here, let’s get baking...


87 Calories a bar, makes 9 bars

 

Ingredients

- 2 cups Rolled Oats

- 1 tsp Baking Powder

- 1 tsp Cinnamon

- 1/2 cup Unsweetened Soya Milk (or your favourite milk)

- 1/2 cup Applesauce

- 1/4 cup The Skinny Food Co’s White Chocolate Syrup

- 2 tbsp Ground Chia Seeds

- 1 tsp melted Coconut oil / Vegetable oil

- 1 tsp Vanilla Extract

- 1 cup Frozen Blueberries and 2 Chopped Strawberries (for the top)


Method

- Pre-heat your oven to 180C Fan. And line an 8x8 square baking tray with greaseproof paper.


- Combine all the ingredients except for the berries in a large bowl. Stir until combined and gently fold in 1 cup of berries. Pour into a 8×8 square baking pan lined with parchment. Evenly spread mixture in pan and top with sliced strawberries.


- Bake for 30-35 minutes or until bars are cooked through and hold their shape. Remove from the oven and place on a cooling rack. Cut into 9 bars and enjoy.


- Store leftover bars in the fridge for up to 1 week. Enjoy :)
