Healthier Banana Bread

Many people hold the view that banana bread is healthier than normal cake. Let me tell you this is not the case, it has just as much sugar and added extras as any other cake.


However, it can be made healthier and taste just as delicious. With only 100 calories per slice this recipe is perfect for those days where you want a treat but you still have to watch how many calories you have.



Serves 15
 

Ingredients

- 2 Egg Whites

- 1 3/4 Cup of Wholewheat Flour

- 1tsp Baking Powder

- 1 Cup Light Brown Sugar

- 1/3 Cup 0% Fat Greek Yogurt

- 1/2 Cup Unsweetened Apple Sauce

- 1 Cup of Mashed Banana

- 1 tsp Vanilla Extract

- Cacao Nibs (optional)



Method

- Pre-heat the oven to 180C Fan and line a loaf tine with baking paper.


- In a large mixing bowl add flour, baking powder and sugar, mix together until fully combined.

- In a jug mix together the yogurt, egg whites and vanilla extract. Once whisked together pour into the flour mix and fold the ingredients together.


- Once fully mixed add in the mashed bananas and apple sauce (and cacao nibs), continue to stir the mix until everything is fully combined.


- Pour the mix into the loaf tin and leave to bake in the oven for 1 hour and 10 minutes, or until golden. Once baked remove from the oven and leave to cool on the side.
