Flapjack Brownies

No messing about here, let's get baking...

Makes 12 Brownies

 

Ingredients

- 200g Unsalted Butter

- 100g Milk Chocolate

- 100g Dark Chocolate

- 3 Eggs

- 100g Plain Flour

- 45g Cocoa Powder (I use Green & Blacks)

- 175g Caster Sugar

- 100g Light Soft Brown Sugar

- Chopped White Chocolate


Method

- Begin by making a batch of my flapjack recipe (See under cookies and traybakes). Don't bake the flapjack, just leave the mix in the lined baking tray and leave to one side.


- Pre-heat your oven to 180C Fan and line a 20 x 30 cm baking tray with baking paper.


- In a bowl sift together your flour and cocoa powder and mix together. Set the bowl to one side.

- Meanwhile, in another bowl mix together both your sugars. Add the eggs one at a time and whisk into the sugar until fully combined.


- In a microwavable bowl add your butter and break up both types of chocolate, then melt in the microwave for 30s intervals. Mix the chocolate and butter in these intervals to make sure it doesn't burn. Alternatively you can melt over a pan of boiling water.

- Once all the chocolate has melted into the butter leave to cool slightly on one side. It needs to cool before adding to the egg mixture as we don't want to cook then eggs. Once slightly cooled pour into the egg and sugar mixture and mix together until fully combined.


- Slowly add the flour mix into the chocolate mix and fold together until all the flour and cocoa powder is combined.


- Once all the ingredients have been mixed together you can pour over the flapjack mix. Make sure the mixture is spread equally in the tray, top with chopped white chocolate and then bake in your pre-heated oven for around 35 minutes or until the middle stops wobbling.


- Remove from the oven once baked and leave to cool in the tin on a cooling rack. Once cooled cut into 12 slices and enjoy.

- These are the perfect rich, fudgy and gooey brownies.
