No messing about here, let's get baking...

Ingredients
Cake
- 2 Apples, peeled, cored, and diced
- Juice of 1/2 a lemon
- 55g Dark Soft Brown Sugar (plus 2 tbsp)
- 1 tsp cinnamon
- 200g Plain Flour
- 1 tsp Baking Powder
- 220g Room Temperature Unsalted Butter
- 150 g Caster Sugar
- 4 Eggs
- 1 tsp Vanilla Extract
Crumble Top
- 30 g Plain Flour
- 3 tbsp Soft Dark Brown Sugar
- 55 g Oats
- 3 tbsp Melted Butter
- 1tsp Salted Caramel Flavouring
Method
- Pre-heat the oven to 160C Fan and line a loaf tin with greaseproof paper.
- In a medium bowl, add your diced apples and sprinkle with lemon juice, 2 tablespoons brown sugar, and ½ tsp cinnamon. Mix together until the apples are coated.
- In a separate bowl, whisk together flour, baking powder and remaining 1/2 tsp of cinnamon.
- In a mixing bowl, beat together the butter, caster sugar, and 55g brown sugar together. Add the eggs, one at a time, until incorporated, then add vanilla.
- Add the flour mix into the mixing bowl and mix until just combined, then fold in apples.
- Pour the mix evenly into the lined loaf tin and even out with a spatular.
- To make the topping, combine the flour, sugar, oats, and salted caramel flavouring. Add the melted butter and mix until mixture comes together.
- Sprinkle then crumble topping over then cake batter and press slightly into the mix until no cake batter can be seen.
- Place the cake in the oven and bake for around 1hour and 20 minutes - 1hour 40 minutes or until a skewer comes out clean. (To prevent the crumble from burning cover with a sheet of foil towards the middle / end of baking)
- Once baked remove from the tin and leave to cool on a wire rack or serve straight away and enjoy it warm :)
