No messing about here, let's get baking...
Makes 8 Bagels
Ingredients
- 500g Strong White Bread Flour
- 7g Yeast
- 10g Salt
- 200g Luke Warm Water
- 30g Soft Butter
- 1 Egg
- 20g Sugar
- Poppy / Sesame Seeds
- 2 tsp Bicarbonate Soda
- 2 tsp Brown Sugar
Method
- In a large mixing bowl mix together your flour, yeast, butter, sugar and salt.
- Make a well in the flour and pour in your luke warm water. Mix using a dough hook or wooden spoon until a dough forms. You can add more water if needed to make the dough hold, you don't want it to be really wet though.
- Remove the dough from the bowl and split in two. Knead both pieces of dough for around 5-6 minutes each or until smooth and elastic.
- Knead the dough back into one piece and roll into a sausage shape. Cut into 8 equal size pieces (I weigh my dough to make sure they are all equal in size) and roll into balls.
- Place the balls on a baking tray and cover with a piece of oiled cling film. Leave in a warm place to rest for 15 minutes.
- Once the dough has rested, push your finger through the centre of each ball and gradually stretch the dough to create a hole around an inch wide.
- Place back on the baking tray and cover with the oiled cling film. Leave to prove in warm place for 30 minutes.
- While the dough is proving, bring a large wide pan of water to the boil and reduce to a simmer. Add 2 tsp of brown sugar and 2 tsp of bicarbonate of soda to the water and mix in. (This will help give the bagels their lovely golden colour). Also pre-heat your oven to 200C Fan.
- Once the dough has proved add the bagels to the water, it doesn't matter if they all don't fit in the pan at once. You want to make sure you have enough room to turn them over in the water. Cook for 60 seconds on each side and leave to drain on a wire rack.
- When all the bagels have been in the water, brush them with an egg wash. This is simply your egg whisked and brushed over the bagels. Then sprinkle the bagels with poppy seeds, chilli flakes etc. You can add whatever you want.
- Place the bagels on a well oiled baking tray and bake for 10 minutes at 200C, then turn your oven down to 180C Fan and continue to bake for then remaining 6 minutes.
- Remove from the oven and leave to cool on a cooling rack.
- Once cooled, enjoy with the filling of your choice.
