No messing about here, let's get baking...
Ingredients
- 225g Self-Raising Flour
- 110g Caster Sugar
- 120g Margarine / Softened butter
- 1 teaspoon Bicarbonate of Soda
- 2 tbsp Golden Syrup, warmed
- 1 tsp Vanilla Extract
Method
- Pre- heat the oven to 180 C Fan and grease two baking trays with butter.
- Warm the golden syrup in the microwave and leave to cool slightly.
- Combine the flour, bicarbonate of soda and sugar and gently rub in margarine with your fingertips until a breadcrumb consistency is achieved.
- Add the warmed golden syrup to the flour mixture, stir well till combined. Take a small walnut sized piece of the dough and roll into a ball and space evenly apart between the two baking trays. (If the mix is to crumbly knead well and add a dash more golden syrup).
- Bake in the pre-heated oven for 10 minutes. While still in the oven, slightly flatten the biscuits using a spatular and bake for another 5- 10 minutes. Or until the surface of each biscuit is golden and slightly cracked.
- Remove from the oven and drop from a low height onto a heat proof mat.
- Carefully remove the biscuits from the tray and leave to cool on a cooling racktray then cool on wire rack.
