Salted Caramel Marshmallow and Gingerbread Biscuits

No messing about here, let’s get baking...

Makes 24 cookies

 

Ingredients

- 400g Plain Flour

- ¾ tsp Bicarbonate of Soda

- 2tsp Ground Ginger

- 2tsp Ground Cinnamon

- ½ tsp Mixed Spice

- ¼ tsp Ground Nutmeg

- 180g Soft Unsalted Butter

- 125g Soft Dark Brown Sugar

- 1 Egg


Method

- Place the butter and sugar in a large bowl and cream until light and fluffy. Then beat in the egg and treacle, scraping any unmixed ingredients from the side of the bowl with a spatula.


- Once combined add the flour a couple of tablespoons at a time; scrape any unmixed ingredients from the side of the bowl. Add in the spices and bicarbonate of soda and keep mixing.

- Once an even dough has formed, take it out of the bowl and wrap in clingfilm. Leave to rest overnight in the fridge. This isn’t necessary but it does help develop the flavour and allows the gingerbread to hold their shape better.


- Once chilled pre-heat your oven to 170°C fan. Take the dough out of the fridge and lightly dust a clean work surface with flour.


- Roll out the dough to a thickness of about 3-4mm with a rolling pin. Cut out circle shapes with a biscuit cutter. For half of the circles cut out some festive shapes using a smaller cutter (this will make the top of the biscuits, leave the back whole).

- Arrange the cookies on baking trays lined with grease proof paper and bake in the oven for about 10–15 minutes.


- Leave the cookies to cool slightly on the trays before moving to a wire rack to cool completely.

- Once cooled, spread an even layer of Mallow and Marsh’s Salted Caramel Marshmallow Whip on the centre of the whole gingerbread. Leave a slight boarder so that the whip doesn’t squash out of the sides when the top has been added.

- Place the front onto the layer of whip and gently press down.

- For an extra festive look, ice with royal icing and enjoy!
