Raspberry and White Chocolate Gooey Brownies

No messing about here, let's get baking...


Makes 12 Brownies

 


Ingredients

- 200g Unsalted Butter

- 100g Milk Chocolate

- 100g Dark Chocolate

- 3 Eggs

- 100g Plain Flour

- 45g Cocoa Powder (I use Green & Blacks)

- 175g Caster Sugar

- 100g Light Soft Brown Sugar

- 250g White Chocolate, Chopped into Chunks

- 200g Raspberries

- 100g Chopped White Chocolate to decorate



Method

- Pre-heat your oven to 180C Fan and line a 20 x 30 cm baking tray with baking paper.


- In a bowl sift together your flour and cocoa powder and mix together. Set the bowl to one side.


- Meanwhile, in another bowl mix together both your sugars. Add the eggs one at a time and whisk into the sugar until fully combined.


- In a microwavable bowl add your butter and break up both types of chocolate, then melt in the microwave for 30s intervals. Mix the chocolate and butter in these intervals to make sure it doesn't burn. Alternatively, you can melt over a pan of boiling water.


- Once all the chocolate has melted into the butter leave to cool slightly on one side. It needs to cool before adding to the egg mixture as we don't want to cook the eggs. Once slightly cooled pour into the egg and sugar mixture and mix together until fully combined.

- Slowly add the flour mix into the chocolate mix and fold together until all the flour and cocoa powder is combined.


- Now add your raspberries and chopped white chocolate and carefully fold into the mix until evenly distributed.


- Once all the ingredients have been mixed together pour into your lined baking tray. Top with 100g of chopped white chocolate to decorate.


- Make sure the mixture is spread equally in the tray and then bake in your pre-heated oven for around 30 minutes or until the middle stops wobbling.


- Remove from the oven once baked and leave to cool in the tin on a cooling rack. Once cooled cut into 12 slices and enjoy.


- These are the perfect rich, fudgy and gooey brownies.
