Marshmallow Krispie Treats

No messing about here, let's get baking...



Ingredients

- 45g Unsalted Butter

- 280g Marshmallows

- 6 cups Rice Krispies (Any cereal of your choice)

- 1 tsp Vanilla Extract

- 200g White Chocolate

- 12 Jammy Dodgers



Method

- Line a 20 x 30cm baking tin with greaseproof paper.


- In a small/ medium pan simmer water on a medium heat and cover with a pyrex bowl. In the bowl add you butter and melt. Once melted gradually add your marshmallows and mix into the melted butter. Mix until the marshmallows are fully melted and add your vanilla extract.


- Keep the bowl over the pan and add the Rice Krispies or cereal of your choice. Stir until thoroughly combined. Make sure your marshmallow mix stays warm, this makes it easier to handle.


- Once combined press into your lined baking tin. Use a buttered piece of parchment paper to press the mixture down, this will make the mixture easier to spread.


- Leave to set and prepare the chocolate. Melt the chocolate in a heat resistant bowl in 30 second intervals in the microwave.


- Once melted, pour over the marshmallow mix and level with a spatula. Then add your Jammy Dodgers and press into the chocolate.


- Leave to set in the fridge for 1-2 hours. Once set, remove from the tin and cut into 12 equal size pieces.
