Jam and White Chocolate Blondies

No messing about here, let's get baking...

Makes 9 blondies

 

Ingredients

- 200g Melted Unsalted Butter

- 105g Caster Sugar

- 105g Light Soft Brown Sugar

- 3 Medium Eggs

- 1tsp Vanilla Extract

- 1tbsp Milk

- 230g Plain Flour

- 150g White Chocolate Chips

- Jam to swirl on top


Method

- Pre-heat your oven to 175C Fan and line a 20x20cm brownie pan with greaseproof paper.


- Start by melting your butter in a microwavable bowl in the microwave.


- In a large mixing bowl beat your butter and both sugars together until light and fluffy. Now add your eggs, vanilla extract and milk and beat again.


- Add the flour and chocolate chips and fold into the mix until everything is combined.


- Pour the mix into your lined brownie pan and even out with a spatula. Now scoop a generous amount of jam over the top and swirl through the mix with a fork.


- Bake in your pre-heated oven for around 20-35 minutes, if the top starts browning, cover with foil and keep baking. There should be a slight wobble in the middle of the pan.


- Remove from the oven when baked and leave to cool in the tin on a cooling rack. Whilst cooling prepare your jam glaze, to do this place 2 tbsp of Jam into a small bowl and add 1tbsp of boiling water and mix together to form a runny syrup. Gently brush the syrup over the top of your blondies.


- Once cooled, remove from the tin and cut into 9 pieces.
