Healthier, No Added Sugar Oatmeal and Raisin Cookies

No messing about here, let's get baking...



Makes 8 Cookies

 

Ingredients

- 70g Plain Flour

- 150g Instant Oats

- 1tsp Bicarbonate of Soda

- 68g Raisins

- 75g Melted Coconut Oil (Or Vegetable Oil)

- 1/2 Cup Honey (Or Sweet Freedom Fruit Syrup/ Maple Syrup)

- 1/2 an Egg

- 1tsp Cinnamon

- 1tsp Vanilla Extract

- 1.5oz Boiled Water




Method

- Pre-heat oven to 160C fan and line a baking tray with baking paper.


- Pour the boiling water over the raisins and leave to soak for 20 mins until plump. Drain the remaining liquid. (If you are of drinking age you can also soak the raisins in 16g of Whiskey to add some depth to the cookies.)


- In a large bowl, mix together the oil and honey/syrup. Gradually beat in the egg, along with the water from the raisins, the cinnamon and vanilla extract.


- Add the flour, bicarbonate of soda and oats and mix into the liquid mix. Finally, mix in the raisins.


- Drop heaped tbsps of the cookie dough onto the baking trays, and press into a circle with then back of a spoon. Space the cookies far apart as they will spread when cooking. Sprinkle with a light dusting of cinnamon and bake for 20 mins until golden.


- Leave to cool for 10 mins on a cooling rack to cool completely.
