Giant Cookie Cake

No messing about here, let's get baking...




Ingredients

- 225g Unsalted Butter or Stork

- 150G Caster Sugar

- 125g Self-Raising Flour

- 2tsp Vanilla Extract

- 9 Cadbury Creme Eggs (Chopped up)




Method

- Pre-heat oven to 170C Fan and line a pizza pan with baking paper.


- In a large mixing bowl, beat together your butter and sugar until creamy.


- Gradually add the flour and vanilla extract until fully combined. It may look like breadcrumbs at this stage, this is fine, you just need to press the mixture together in you hands. I do this by grabbing a handful of the mix at a time and squeezing it in my fist.


- You then want to add 5 of your chopped Creme eggs to the mix and knead to combine into the dough.


- Spread the remaining chopped creme eggs onto the lined pizza pan. Then cover these with your cookie dough. Press the dough into the base of the pan and make sure it is equally spread.


- Once the dough is in an equal layer bake in the oven for 25 minutes or until golden.


- Once baked, remove from the oven and leave to cool in the pan on a cooling rack.


- When the cookie has fully cooled, carefully remove it from the pan, using the sides of the baking paper to help lift it out.


- Decorate how you like, I decorated mine with buttercream and sprinkles to create a Millie's Cookies effect.
