The chocolate layer reminds me of Cadbury's Marvellous Creations chocolate bars.... so yummy. Enough writing, let's get baking...
Makes 12 big pieces
Ingredients
Base
- 250g Plain Flour
- 200g Unsalted Butter
- 100g Caster Sugar
- 1/4 tsp Vanilla Extract
Caramel
- 90g Unsalted Butter
- 379g Condensed Milk (1tin)
- 2 tbsp Golden Syrup
- 2 tbsp Dark Brown Sugar
Chocolate Topping
- 300g Milk Chocolate
- 50g Unsalted Butter
- 2 bags of Mini Eggs (Crushed)
- Jelly Beans
Method
- Pre-heat the oven to 140C fan and line a 20 x 30cm tin with parchment paper.
- In a large mixing bowl add the flour and butter and rub together using your fingertips until you achieve a breadcrumb consistency. Then add in the sugar and vanilla extract and knead to from a dough.
- Place the dough into the lined tin and press out evenly until the base of the tin is covered. Now gently prick the shortbread dough all over with a fork.
- Bake in the oven for 45-50 minutes, or until the shortbread is golden. Once baked, remove from the oven and leave to cool in the tin on a cooling rack.
- Whilst the base is cooling prep the caramel filling. To do this you need to add the butter, condensed milk, sugar and golden syrup into a pan. On a medium heat, continuously whisk the caramel for around 6-10 minutes until it has thickened and looks almost fudge like.
- Leave to cool for a few minutes in the pan and then pour evenly over the base, making sure to cover all areas.
- Leave the caramel to set in the fridge for around 10-20 minutes and then begin preparing the chocolate top.
- In a microwavable bowl and your chocolate and butter. Make sure to use cooking chocolate as this melts better. Melt the chocolate in the microwave using 30 second intervals and mix in between.
- Once melted, pour evenly over the caramel. Now crush your mini eggs sprinkle over the melted chocolate. Gently press into the chocolate and then top with jelly beans for an extra surprise.
- Leave to set in the fridge for at least 2 hours. Once set cut into pieces and serve.
