Easter Egg-plosion Rocky Road

No messing about here, let's get baking


Serves 12

 

Ingredients

- 250g Milk Chocolate

- 250g Dark Chocolate

- 115g Unsalted Butter

- 165g Golden Syrup

- 120g Cookies of your choice (crushed)

- 80g Mini Marshmallows

- 220g Mini Eggs

- 1 bag of Sweet Popcorn (I use Krispy Kreme)

- Creme Eggs to decorate




Method

- Begin by lining a 20 x 30cm pan with parchment paper.


- Measure out the crushed cookies, mini eggs, popcorn and marshmallows into a large mixing bowl.


- In a separate microwaveable bowl add all the chocolate, butter and golden syrup and heat on full power for 1 minute 40 seconds (do this in 30s intervals).


- Stir the chocolate mixture throughly until all the butter is incorporated and the mix looks silky.


- Pour the chocolate mix into your large mixing bowl with all your other ingredients and mix until all the biscuits, popcorn, mini eggs and marshmallows are covered in chocolate.


- Once fully combined, pour into the baking tin and even out with the back of a spoon.


- When the mix is level, chop up your creme eggs and place on top.


- Leave in the fridge for at least 2 hours to set before cutting into 12 equal pieces.
