Banana Bread Blondies

No messing about here, let's get baking...


Makes 6 Large Blondies

 

Ingredients

- 94g Unsalted Butter

- 150g Light Brown Sugar

- 1 Egg

- 2 tsp Vanilla Extract

- 124g Plain Flour

- 1 Banana (Mashed)

- 100g White Chocolate Chips

- Dried Banana Chips

- Enough Walnuts to line the base of your brownie pan



Method

- Pre-heat your oven to 180C Fan and line an 8×8" baking pan with greaseproof paper.


- In a small microwavable bowl melt your butter until just melted but not boiling.


- Now in a mixing bowl beat your melted butter and sugar, until combined. Add in your egg and vanilla and continue mixing until everything has come together.


- Fold in your flour and mashed banana until the batter is smooth and there are no flour lumps left. Now add in your chopped white chocolate and fold into the mix.


- Line the base of your pan with a single layer of walnuts and pour the blondie batter equally over the top in an equal layer. Even out with a spatular and top with banana chips and chopped white chocolate. Bake in your pre-heated oven for 25-30 minutes or until golden and the centre doesn't wobble.


- Remove from your oven and leave to cool on a cooling rack. once cooled, remove from the pan and cut into 9 equal pieces.
